To make Aceh’s typical udeung tamarind sauce, first prepare the ingredients.

Ingredients:

  • 50 grams of fresh prawns
  • 15 pieces of cayenne pepper (to taste)
  • 5 cloves of red onion
  • 3 star fruit wuluh
  • 2 lime leaves
  • 1 lemongrass stalk
  • 1 tsp salt
  • Lime/lemon
  • Sugar (optional)
  • Right amount of oil

2. Marinate the prawns with lime

The first step in processing the udeung tamarind sauce is cleaning the prawns. After the prawns are washed, add the lime juice. Leave it for about 15 minutes.

Heat a little cooking oil. Fry the prawns until they change color or according to the desired level of doneness. Lift and drain.

Peel the onion skin. Remove the cayenne pepper stalk. Clean the cayenne pepper, shallot, star fruit, lime leaves and lemongrass.

Chop the onion. Thinly slice the lime leaves and cut the star fruit into small pieces. Take the lemongrass, then cut into small pieces.

Prepare the pestle. Roughly grind the cayenne pepper, shallot, star fruit, lime leaves and lemongrass.

Add fried prawns, sugar and salt. Knead again briefly until the shrimp and other ingredients are well mixed. Taste check. If it’s still not enough salt, you can add more.
